Microwave Apple Crisp

Apple pie is all fine and good, but I would choose apple crisp over apple pie any day.  And as easy as this recipe is, I could eat it any day I wanted.  It only takes 15 minutes from beginning to end and there is no worrying about a pie dough being too thick/thin/wet/crumbly/sticky/etc.

To start off, scoop contents of a can of apple pie filling into a 9-inch baking dish.  You can leave them as they are, but I like to cut them into smaller bite-size pieces.  I take a pair of kitchen scissors and just start whacking at them.  Once that is done, add cinnamon to the apples and mix to evenly distribute and spread out in the pan.

Combine sugar, flour, oats, and butter in a separate bowl.  Make sure that your butter is softened, not melted.  You need it to be still hold its shape and help to make the crumble.  Combine with either a pastry cutter or a fork until crumble is formed.  Spread evenly over the apples.

Microwave on high for 9 minutes.  Don’t feel tempted to cook longer.  When it comes out of the microwave it will be bubbling and pale in color.  Take out of the microwave and allow to cool slightly.

Top with ice cream and enjoy!

Ingredients

  • 1 can apple pie filling
  • 1 tsp. cinnamon
  • 1 c. flour
  • 1 c. sugar
  • 1/2 c. oats
  • 3/4 c. butter, softened

Instructions

  1. Place apple pie filling in a 9-inch baking dish.  Cut apples into smaller pieces, if desired.  Add cinnamon and stir to combine.  Spread apples evenly in pan.

  2. Combine flour, sugar, oats, and softened butter in medium bowl. Use a pastry cutter or a fork to combine and form a crumble. Spread crumble evenly over apples.

  3. Microwave on high for 9 minutes. Don't overcook. Take out of microwave and allow to cool slightly.

  4. Serve warm with ice cream.
