I can’t think of a more perfect food for a crisp, fall day than a hot bowl of soup. This one comes together so quickly and is sure to hit the spot.
Cheddar Chowder
Ingredients
- 2 c. water
- 1/2 c. carrots, diced
- 1/4 c. onion, chopped
- 2 c. potatoes, diced
- 1/2 c. celery, diced
- 1 tsp. salt
- 1/4 tsp. pepper
White Sauce
- 1/4 c. butter
- 1/4 c. flour
- 2 c. milk
- 2 c. cheese, grated (can use 1 can cheddar cheese soup)
- 1 c. cubed ham
Instructions

Combine water, vegetables, salt, and pepper and boil 10-12 minutes until vegetables are tender.

In a small saucepan, make white sauce by melting the butter, then add flour and stir until smooth, about 1 minute. Slowly add milk; cook until thickened. Add cheese to white sauce; stir until melted.

Add white sauce and cubed ham to vegetables that have not been drained. Heat through.
