Cheddar Chowder

I can’t think of a more perfect food for a crisp, fall day than a hot bowl of soup.  This one comes together so quickly and is sure to hit the spot.

Cheddar Chowder


Ingredients

  • 2 c. water
  • 1/2 c. carrots, diced
  • 1/4 c. onion, chopped
  • 2 c. potatoes, diced
  • 1/2 c. celery, diced
  • 1 tsp. salt
  • 1/4 tsp. pepper

White Sauce

  • 1/4 c. butter
  • 1/4 c. flour
  • 2 c. milk
  • 2 c. cheese, grated (can use 1 can cheddar cheese soup)
  • 1 c. cubed ham

Instructions

  1. Combine water, vegetables, salt, and pepper and boil 10-12 minutes until vegetables are tender. 

  2. In a small saucepan, make white sauce by melting the butter, then add flour and stir until smooth, about 1 minute.  Slowly add milk; cook until thickened.  Add cheese to white sauce; stir until melted.

  3. Add white sauce and cubed ham to vegetables that have not been drained.  Heat through.
